Brandenburger's Old Time Jungle Juice

Ingredients

I made some from a recipe that an old friend [long deceased] gave me, and enjoyed it one time. Lost the recipe nearly 40 years ago. Here's the mead recipe?

Master Terafan's Clove Mead {modified}

  • 4 Gallons Water
  • 5 Qts Honey or 6 qts of unfinished honey
  • 1 orange peel
  • 1 Tbsp Cloves
  • 3 Tea bags (Constant Comment)
  • Epernay II yeast

Add everything together with 4 gallons of water, and boil. Turn off the heat and stir well. Let stand covered until cool. Pour into a vat and add the yeast. Epernay II yeast works very well, but champagne yeast or ale yeast are also fine. Let the must work in the vat for 4 days, and siphon into a 5 gallon "garafon" and add the last gallon of boiled water. Use a fermentation lock. Let it ferment for 18 days, and then siphon into bottles. Seal or cap the bottles and let sit at room temperature for two weeks, then put in the refrigerator. You can drink it at any. time now.
