Pepper Wine
Ingredients
- 4 lbs. Asst'd Peppers (Jalapeno's, Anaheim, Sweet Banana, Green Bell add according to your taste)
- 3 cups Welch's White Grape Concentrate
- 5 lbs 6 oz Sugar (starting SG adjusted 1.085)
- 3 tsp Acid Blend
- 8 Drops Pectic Liquid Enzyme
- 1 1/2 tsp Nutrient
- 1/4 tsp Tannin
- 1 zest of Lemon
- Water to 2.8 gal
- Pasteur Champagne Yeast
This did not turn out as Hot as I thought it would be but is warm. The bouquet is full of pepper (will clear your sinus condition), slight greenish in tint but not bad. Though it is very drinkable and goes well on a cold day the main usage I have found is for cooking. It brings a great taste to a pot of Chili...
