Plum Liqueur Recipe
Ingredients
- 1 pound fresh plums, either cut up or used whole
- 3 cloves
- 1/4" piece of cinnamon stick or pinch of cinnamon
- 1 cup sugar
- 2 cups vodka
[Note that the book says to use sweet, small purple plums or the large, meaty tart plums, fresh from the grocer's counter or even from the tree if you can.]
Place cut up plums and pits or whole plums (pierce the skins to the pit) in a jar with flavorings, sugar and vodka. Be sure vodka covers plums. Steep 3 months, shaking occasionally to mix all the ingredients. Strain and filter. Enjoy the fruit as a dessert as it has been sweetened and has the whole liqueur flavor
OR
Place plums and flavorings without sugar in the vodka. Steep 10 days. Strain and filter, add 3/4 cup sugar syrup*; 1/2 pound dried prunes may be substituted in either of these recipes instead of the plums.
* 1 unit of syrup comes (roughly) from 1 unit of sugar dissolved by boiling in 1/2 unit of water.
