Red Grape Concentrate
5 Gallon recipe.
Ingredients
- 10 - 32oz bottle Welch's Red Grape Concentrate
- 2 lbs. Concord Grapes (left on skins 1 1/2 weeks in primary)
- 1.8 lbs. Sugar (starting SG 1.100)
- 20 drops Pectic Liquid Enzyme
- 3 tsp yeast nutrient
- 1/4 tsp Meta Powder (thereafter as req'd between racks)
- 3 oz. Oak Chips
- RC 212 Yeast
Bouquet of Concord but not heavy, residual sugar makes this a sweet wine but not overpowering, deep red, cleared very well. Received lots of praise on this one, even those that like a dry wine liked this.
Starting numbers: SG 1.110 / TA 60 / Acid .9 / pH 3.66
