Wheat Wine
Ingredients
- 1 lbs wheat
- 2 1/2 lbs brown sugar
- 1 1/2 lbs raisins or
- 1 pint (white grape) concentrate
- 2 tsp citric acid
- 1 gallon water
- Amylozyme 100 or Amylase (Used for Starch Haze, follow label directions)
- yeast and nutrient (used Champagne yeast)
Soak the wheat in one pint of water overnight. Mince the wheat and raisins (or use concentrate) put them in a bowl. Pour on hot water. Add citric acid, and allow to cool add amylozme 100, yeast and nutrient. Cover well and let sit 10 days, stirring daily, strain into fermenting jar, rack when fermentation is complete and wine is clear.
